In 1831, Samuel Morse – inventor of the telegraph – described it as ‘species of the most nauseating cake… taken reeking out of the sewer.” All of that changed after Italian unification and a visit from Queen Margherita. Anxious to provide local specialties, the cook created three versions. Margherita’s favourite being a combination of tomatoes, mozzarella and basil. Her seal of approval transformed pizza into a national dish. It made its mark in America in 1905 at a Italian New York restaurant called ‘Lombardi’s’.
